Mama was on the Honey Hill Blog the other night, and she wanted to try these cookies! They were so simple to make...and delicious! An easy snack, just keep a lemon cake mix in the cabinet and you are good to go! We are going to try it with chocolate cake mix next time! Let you know how it tastes!
Lemon Cookies
1 box lemon cake mix
2 eggs
1/3 cup of oil
confectioner's sugar
Preheat oven to 350 degrees. Mix lemon cake mix, eggs and oil in a bowl. Spoon out quarter sized pieces of dough and roll into balls. Dip balls into confectioner's sugar and place on a cookie sheet.
Bake 8 to 10 minutes or until tops begin to crack and bottoms begin to just turn golden. Remove from oven and let cool completely.
